There are many recipes for this traditional lemon square favourite but this is always the one that I always go back to. Believe me I've tried many fantastic lemon squares but none compare to my go-to recipe for this rich tasting lemony treat. I made this treat with my little sister today when she came over to visit. I have quite a few memories associated with this lemon treat, reason why I think I keep going back to this particular recipe. My sister and I have baked this treat quite a few times in the past several years and have taken them to many family gatherings. A family member once said "oh it tastes just like a delectable lemon tart," and I have to say I certainly agree!

Makes 9-12 squares

Preheat the oven to 350 degrees F.

Baking time: 15-17 minutes (first bake)
25-28 minutes (2nd bake)


  • 1/2 cup butter, softened
  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • grated zest of one lemon
  • 3 tbsp fresh lemon juice
  • powdered sugar, for dusting on top

Preheat the oven to 350 F. In a large bowl, cream together the butter and sugar; blend in the flour until crumbly in texture. Press the mixture onto the bottom of an 8" square cake pan and bake in the oven for 15-17 minutes or until light brown in colour. Take it out of the oven and set aside.

Clean out the bowl that you were using and beat in the 2 eggs and sugar. Stir in the flour, baking powder, salt, lemon zest, and fresh lemon juice. Pour the lemon mixture over the baked crust and place it back into the oven for another 25-28 minutes or until just set. Let it cool completely, then dust lightly with icing sugar. Cut into squares and eat!
