This is a very elegant and sophisticated potato side dish that I like to serve when there are guests coming over. The sweetness of the potato and the tangy flavour of the goat cheese matches really quite well together. The cream just adds that sophistication to this simple gratin dish. Give this gratin a try at your next family get together.

Serves 4

Preheat the oven to 375 F

Baking time: 25-30 minutes

  • 3 large sweet potatoes (1-1/2 lbs), sliced 1/4" thick
  • 1-1/2 cups cream
  • 2 garlic cloves, minced
  • coarse salt
  • freshly cracked black pepper
  • pinch of nutmeg
  • 1/2 tsp dried sage
  • 5 oz. soft unripened goat cheese, crumbled
  • 1/2 cup fresh or dried bread crumbs
  • 1/4 cup freshly grated Parmesan cheese

Preheat the oven to 375 F and lightly grease a casserole dish. In a medium sized saucepan, add in the sliced sweet potatoes, cream, garlic cloves, salt, pepper, nutmeg, and dried sage. Bring the saucepan up to a nice bubble, and at that point crumble in the goat cheese. Let the potatoes cook for about 8 minutes or until crisp-tender.

Pour the potatoes and cream mixture into the prepared casserole dish, and sprinkle the bread crumbs and the grated Parmesan cheese on top. Bake it in the oven for 25-30 minutes or until golden brown. Serve immediately.
