Chocolate brownies are a true weakness of mine. I can hardly go past a brownie without it ending up in my mouth. This brownie recipe is simply "the best" because of how chocolatey the flavour of this brownie is while having so little ingredients. Furthermore, there is little to no thought process involved in making these brownies. Now that's the type of recipe I love... The kind that indulges my palate quickly with the chocolatey goodness that I long for. This is a recipe that I have had in my personal cookbook for the last several years and it has never ever failed me. During the past holiday seasons, I have taken these brownies to family functions, parties and even given them out as gifts. It's just a terrific recipe to have in your repertoire. Give these a definite try!

Makes 12 squares

Preheat the oven to 350 Degrees F.

Baking time: 35 minutes

  • 1/2 cup butter or margarine
  • 1 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp coffee granules
  • 2 eggs
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

Preheat the oven to 350 F and grease or line with parchment paper an 8" square baking pan. In a medium sized saucepan, melt the 1/2 cup of butter on low heat. Take it off the heat and stir in the sugar, vanilla extract, and coffee granules. Add in one egg at a time, making sure to quickly incorporate the eggs. Then stir in the cocoa powder, flour, salt and baking powder until just combined. Pour it into the prepared baking pan and bake it in the oven for 35 minutes. Cool for a good 30 minutes before cutting it into squares.
