This is a nice quick treat to make for breakfast, brunches or if you need a snack on the go! The molasses gives it a rich deep colour and flavour. Not too much in this recipe but definitely one to keep in your recipe book.

Adapted and modified from the "Snappy Ginger Muffins" recipe from Taste of Home: Prize Winning Recipes Magazine (Spring 2005)

Makes 10 muffins

Preheat the oven to 350 Degrees F.

Baking time: 20-25 minutes

  • 1/4 cup vegetable oil
  • 4 tbsp granulated or light brown sugar
  • 1/2 cup molasses
  • 1 egg
  • 1-1/2 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp each: ground cinnamon, ground ginger
  • pinch of salt
  • 1/2 cup water

Preheat the oven to 350 F and line the muffin pan. In a large bowl, combine the vegetable oil, sugar, molasses, and egg. Then add in the flour, baking soda, the spices, salt and water. Spoon the muffin batter evenly into the lined muffin pan and bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean. Can serve warm or at room temperature.
