This is a sweet treat that I like to have any time of the day. I love making chocolate chip muffins for the fact that it's sweet without being over the top. It just tickles my tastesbuds with just enough chocolatey flavour to keep me satisfied throughout the day. This is a fun one to make with the kids and you'll have these special treats to keep them happy too!

Adapted from the "Chocolate Chip Muffins" recipe in the "Muffins" Cookbook (2005). Written by: Gemma Reece

Makes 12 muffins

Preheat the oven to 400 Degrees F.

Baking time: 25 minutes

  • 3 tbsp soft margarine or butter
  • 1 cup superfine granulated sugar
  • 2 large eggs
  • 2/3 cup whole plain yogurt (I used raspberry yogurt)
  • 5 tbsp milk
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup semisweet chocolate chips

Preheat the oven to 400 F and line a 12-cup muffin pan with paper muffin cups. In a large bowl, cream together the margarine and sugar until fluffy in texture. Mix in the eggs, yogurt, and milk until it is just combined.

Add in the flour and baking soda until just moistened, then gently stir in the chocolate chips. Spoon the muffin batter evenly into the lined muffin pan, and bake it in the oven for 25 minutes or until golden brown. Cool completely.
