I find one of the most gratifying and simple food pairings are saucy and sweet baked beans with a fried egg on the side. There is just something about the two together that makes me feel all warm and fuzzy inside. That may sound a bit cheesy to you but there is just no other way to describe it. This meal is satisfying, filling because of the beans, and ultimately cheap to make. These are just a few reasons why I think you should make this. It's a good one, enjoy!

Serves 4

Preheat the oven to 400 Degrees F.

Baking time: 22-25 minutes


  • 1 can (540ml) of black beans, drained and rinsed
  • 1 small onion, chopped
  • 1/4 cup mild chunky salsa
  • 1 tbsp yellow mustard
  • 1/4 cup beef stock
  • 1/4 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 tbsp soy sauce
  • 1/2 tsp chili powder
  • coarse salt
  • freshly cracked black pepper
  • 2 tbsp olive oil
  • 4 eggs

Preheat the oven to 400 F and in a shallow casserole baking dish, combine all of the ingredients listed. Gently mix it altogether and place it in the oven. Bake it for a good 25 minutes or until you see the sauce thicken.

Heat oil in a large non-stick skillet, and on medium heat, fry the eggs any way you like. I recommend cooking the eggs either sunny side up or over easy. I like the egg yolk to come oozing out onto my baked beans while I'm eating. Serve immediately.
