This is such an interesting way to have oatmeal in the morning. It's definitely not the smooth kind of oatmeal you're used to having. It is a bit chewy in texture, and with the addition of the diced apples it tastes just like an oatmeal apple cookie all crumbled up. Serve this with a little bit of milk or eat it just as is with a nice dollop of vanilla yogurt.

Serves 4-6
Preheat the oven to 350 Degrees F.
Baking time: 25 minutes
Ingredients:
- 1-1/2 cups quick-cooking
- 2 Golden delicious apples, cored, peeled and diced
- 1/2 cup granulated sugar
- 1/2 cup milk (optional: additional milk when serving)
- 1/4 cup of vegetable oil or melted butter
- 1 egg
- 1 tsp baking powder
- pinch of salt
- 1 tsp pure vanilla extract
Preheat the oven to 350 F and lightly grease or line a 13" x 9" x 2" baking pan. In a bowl, combine all of the ingredients and pour it into the greased baking sheet. Bake it in the oven for a good 25 minutes or until the edges are golden brown. Serve warm immediately.
