Good pickles don't always have to be from a jar, try these alternatives. These pickles are quick and definitely taste more fresh. They pair well with sandwiches or any hearty meal that needs a bit of freshness.

Yields enough for 2


  • cucumber slices (from one cucumber used for salads)
  • 2 tbsp cider vinegar
  • 1 tbsp vegetable blend seasoning
  • coarse salt
  • freshly cracked black pepper
  • 1 tsp sugar
  • 1 tsp yellow mustard
  • green onion, chopped (optional)

In a medium sized bowl, add cider vinegar, vegetable blend seasoning, coarse salt, black pepper, sugar and yellow mustard. Whisk the ingredients to combine, slice the cucumber diagonally and add them in. You can add in the chopped green onion at this point if you wish. Coat the pickle dressing all over the cucumber slices and then refridgerate for at least 30 minutes. You want to serve this cold.
