When I've had a really super busy day or just don't feel like putting too much effort into lunch or dinner I love making pitas. Although I do love the classic chicken caesar pita I don't like the high calorie and fat count associated with this yummy treat; so I re-created this recipe by replacing some high calorie ingredients with something else that would hit the same flavour notes. I wrapped the chicken breast with proscuitto and seared the chicken on both sides. The proscuitto really brought out a bacon flavour which we all love with caesar salad. The end result turned out wonderful and I honestly have to say did not miss the fat! Enjoy!

Serves 4

Ingredients for caesar salad:

  • 1 head of romaine lettuce, chopped into salad pieces (feeds 4 people)
  • 1 pint cherry tomatoes, halved
  • half of a sweet onion, sliced thin
  • handful of chopped fresh parsley or basil
  • 2 large chicken breasts, halved
  • 4-6 thin slices of proscuitto
  • coarse salt
  • freshly cracked black pepper
  • 4-6 Middle Eastern style Pitas

Ingredients for Light Caesar Dressing:

  • 1 tbsp each: red wine vinegar and fresh lemon juice
  • 3 anchovy fillets or 2 tsp anchovy paste
  • 1 tsp dijon mustard
  • 2 cloves garlic, grated finely
  • 1/2 tsp worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup plain yogurt or light mayo
  • 1/4 cup extra virgin olive oil
  • 1/4 cup buttermilk (or substitute 2% milk with 1 tbsp lemon juice)
  • 1 tsp dried basil
  • coarse salt and ground pepper

1. In a large bowl, add and mix the romaine lettuce, sliced sweet onions, cherry tomato halves and the chopped fresh parsley or basil, and set it aside. Take the chicken breasts and slice them carefully in half and wrap the chicken breasts halves around with the proscuitto. Preheat a non-stick skillet, drizzle 1 tbsp of olive oil and sear both sides until cooked through. Set it aside to cool slightly.

2. In a blender, add in all of the ingredients listed for the dressing and blitz the dressing together. Taste to make sure it doesn't need more seasoning. Pour it into a bowl and place it into the fridge until you're ready to assemble.

3. Toss the salad together with the dressing. Note: You may not need all of the dressing so don't pour it all into the bowl at once. Slice the chicken breasts and either toss it together with the salad or serve it on top of the salad as I have in the picture. Wrap your chicken caesar pita and enjoy!
