HIGH FIBRE CRAN-BRAN MUFFIN

This is a "really good for you" kind of muffin recipe. It is high in fibre, has dried cranberries and chopped walnuts. If you're one of those people that always seem to skip breakfast in the morning make a batch of these the night before, and have breakfast on the go!

Adapted and modified from the "Bran muffin" recipe from CookingNook.com

Makes 12 muffins

Preheat the oven to 400 Degrees F.
Baking time: 15 minutes

Ingredients:

  • 1 cup natural wheat bran
  • 1-1/2 cup whole wheat flour
  • 1/2 cup dried cranberries
  • 1 tsp each: baking powder, baking soda
  • 3/4 cup milk
  • 1/2 cup molasses
  • 3 tbsp olive oil
  • 1 egg, beaten
  • 1/4 cup chopped walnuts (optional)

Preheat the oven to 400 F and line your muffin pan with paper cups. In a large bowl, add in all of the dry ingredients and create a well in the centre; by carefully pushing the dry ingredients to the sides of the bowl. Add in the milk, molasses, olive oil, and the egg. Using a spatula, gently start to mix the ingredients together. Note: make sure to mix going inside out. Once the mixture is just combined, gently mix in the chopped walnuts. Spoon the muffin batter into the lined muffin pan and bake for 15 minutes. Insert a toothpick into the centre of the muffin and if it comes out clean it has finished baking. Leave it to cool for about 15 minutes and enjoy!
