Chocolate Brownies are my weakness and I just can't help myself whenever I see a chocolate brownie just sitting there in a coffee shop, waiting for me to eat it. Although the idea of melted down chocolate gets my palate going; I don't always have the time or the patience to stand in the kitchen slowly going through a complicated brownie recipe. I created this recipe so I could just whip up a quick batch of this enticing treat without going through complicated steps. This recipe is also for those who are watching their caloric intake because there is hardly no butter and there is no melted chocolate. But I can pretty much guarantee that you will be satisfied with this quick version of the classic dessert favourite! So moist, slightly cakey and chewy in texture and so ultra delicious!

Makes about 16 brownies

Preheat the oven to 350 Degrees F.
Baking time: 40-45 minutes


  • 1 cup all-purpose flour
  • 1/2 cup good quality cocoa powder
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp espresso powder
  • 2 tbsp light margarine
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 large whole egg
  • 1 egg white
  • 2 tbsp milk
  • 3/4 cup light mayonnaise (Substitute: apple sauce or thick yogurt)

1. Preheat the oven to 350 F and grease or line a 9" square baking pan. In a large mixing bowl, add and whisk in the cocoa powder, flour, baking powder and salt.

2. In another bowl, add in 2 tbsp margarine and 3/4 cup of granulated sugar, and cream it slowly together. Then stir in the espresso powder, brown sugar, egg, egg white, 2 tbsp milk and the 3/4 cup of mayonnaise. Add the wet mixture into the bowl of dry ingredients and incorporate it altogether until just moist.

3. Pour the brownie batter into the lined baking pan and bake it in the oven for 40-45 minutes, or until a toothpick inserted in the middle comes out mostly clean. Let the brownies cool for about 15 minutes, then start to slice it into portions.

Serving and Storing Brownies: I recommend cooling the brownies almost completely before eating them. Store the brownies in an airtight container, let it re-create more of the moisture in the brownies. It tastes even better a few hours afterwards yum!
