ORANGEY CARROTS & BROCCOLI SIDE

This side dish recipe is one that I keep on hand if I need to make something quick to go along side a grilled piece of beef or chicken. The orange marmalade gives the carrots and broccoli a little bit of sweetness, and the orange flavour does mask some of that natural broccoli flavour that most kids and some adults don't usually like. If you have a finicky veggie eater in the house but you want to incorporate more vegetables in your family's diet try this side dish. I think they just might like it.

Serves 4

Preheat the oven to 425 Degrees F

Baking time: 30 minutes

Ingredients:

  • 1 pound of baby carrots
  • 1 head of broccoli florets
  • half of a vidalia onion, sliced thin
  • 2 tbsp olive oil
  • 1-1/2 tbsp orange juice
  • 2 tbsp orange marmalade
  • 1/4 tsp dried thyme
  • coarse salt
  • freshly cracked black pepper

1. Preheat the oven to 425 F and take out a large casserole dish. In the casserole dish, add in the 2 tbsp of olive oil, the orange juice, 2 tbsp of orange marmalade, dried thyme, salt and pepper. Whisk the ingredients altogether.

2. Add the vegetables into the casserole dish and using either your clean hands or a pair of tong thoroughly coat the vegetables with the orange marmalade mixture. Put it into the oven and bake it for about 30 minutes. Serve it on the side of your favourite grilled meat.
