CONFETTI COUSCOUS WITH ORANGE SEGMENTS

Couscous happens to be one of my favourite 5 minute side dishes. Since couscous is a miniature pasta you could flavour it a thousand ways. To make the couscous look colourful and delicious I added red bell pepper, parsley and green onions. To really jazz up the flavour I added raisins and one of my favourite fruits - oranges. This turned out to be a colourful, light, and satisfying side dish for almost any meal.

Serves 2

Ingredients:

  • 1/2 cup couscous
  • 1/2 cup hot water
  • generous pinch of coarse salt
  • ground black pepper
  • 1/4 tsp ground cinnamon
  • 1 tbsp extra virgin olive oil
  • half a red bell pepper, chopped
  • green onion, chopped
  • orange, segmented (save the juice as well)
  • 1/4 cup raisins
  • handful of chopped fresh parsley

1. Take out a heat proof mixing bowl and add in the dry couscous. Boil a little water in either a kettle or pot and measure 1/2 cup of hot water and add it in with the dry couscous. Cover the bowl with a plate or saran wrap for about 5 minutes, or until the couscous has absorbed all of the water.

2. Take the lid off and sprinkle in the ground cinnamon, salt and pepper. Using a fork fluff up the couscous and drizzle in the olive oil. Add in the chopped red bell pepper, green onion, parsley and the 1/4 cup of raisins. Segment the orange and squeeze some of the juice into the couscous as well. Gently toss the couscous to incorporate all of the ingredients and serve.
