Here is an easy way to enjoy barbequed pork without standing over a hot grill. I made a quick homemade barbeque sauce and poured half of the sauce on the meat and just let it do it's thing in the oven. 35 minutes later I got a super moist barbequed flavoured pork loin. My friends if you want to impress your family and you're not a great cook this recipe is the one for you.

Serves 4

Preheat the oven to 400 degrees F.

Baking time: 35-40 minutes

  • 1 tbsp olive oil
  • 1/4 cup red onion, chopped finely
  • coarse salt
  • freshly cracked black pepper
  • 3 garlic cloves, minced
  • 1/4 tsp chili powder
  • 1/4 tsp dried thyme
  • 1/4 tsp dried rosemary
  • 1/4 cup low sodium chicken stock
  • 1 can of condensed tomato soup (284 ml)
  • 2 tbsp apple cider vinegar
  • 3 tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 tbsp orange juice
  • pork loin roast (1), trim the outer layer of fat if any

1. Preheat the oven to 400 F and take out a medium sized casserole baking dish and set it aside for now. Then take out a saucepan and preheat the pan on medium high heat. Drizzle in the olive oil and add in the chopped red onion, minced garlic, pinch of salt, pepper, chili powder, dried thyme, and the dried rosemary. Saute for about a minute.

2. Deglaze the saucepan with 1/4 cup of chicken stock and make sure to scrap up the brown bits from the bottom to build flavour. Add and stir in the tomato soup, apple cider vinegar, brown sugar, soy sauce, and the orange juice. Drop the heat down to medium and let it simmer for a good 10-12 minutes, stirring occasionally. Let the sauce reduce and thicken slightly. Once it has reached this point take it off the heat and cool for about 20 minutes.

3. Preheat a non-stick skillet on medium high heat. Drizzle 1 tbsp of olive oil on top of the pork loin and using your hands or a pair of tongs make sure that each side of the pork loin is coated with the oil. Sear all sides of the loin in the pan. This should only take a minute or two per side. Then put it into the casserole dish.

4. Take half of the cooled sauce and pour it over the seared pork loin and make sure all sides are coated. Put it into the 400 F oven for 35-40 minutes. Make sure every 10 minutes to check on it and to brush the meat with the sauce. Take it out of the oven when ready and let it rest for several minutes before slicing. Serve the remainder of the sauce beside the pork slices and eat.
